Baccalà Mantecato (Venetian whipped cod mousse).

Only 3 ingredients:

boiled cod 5/6 minutes

seed oil and

elbow grease to beat it by hand, alternating a few tablespoons of boiling water.

Salt and pepper.

My grandfather Toni Osto made 60 kg. The week only and always like this.

On the planetary mixer it becomes too ground instead it must have some splinters of pulp under the teeth.
