🐟 Creamed cod (Veneto) – (Venetian whipped cod mousse).

Cod whipped with oil, until obtaining a soft cream 🧑‍🍳

📝 Ingredients:

Salt and freshly ground black pepper, to taste 🧂

Fresh chopped parsley, to garnish 🌿

👩‍🍳 Instructions:

Cook the cod:

Place the cod in a saucepan with cold water and bring to the boil. Simmer for about 30-40 minutes, until the fish is soft and flakes easily. Drain it, remove the skin and bones. 🐟

Prepare the cod base:

In a large bowl, place the cooked cod and start flaking it with a fork, creating small pieces. 🧑‍🍳

Cream the cod:

In a small saucepan, heat the milk and crushed garlic until warm without boiling. Gradually add the hot milk to the cod, stirring vigorously with a whisk or fork, until you obtain a soft and frothy cream. Slowly add the extra virgin olive oil little by little, continuing to mix, until you obtain a soft consistency. 🧄🫒

Season and serve:

Add salt and pepper and continue mixing until the mixture is well blended. Transfer the cream to a serving dish and garnish with chopped fresh parsley. 🌿

Accompaniment:

Serve the creamed cod with toasted bread croutons or as an appetizer, accompanied by a good white wine. 🍞🍷

💡 Tips:

Consistency: If the cream is too thick, add a little more milk to make it thinner. 🥛

Variations: You can enrich the cod with a pinch of chili pepper or flavorings such as rosemary. 🌶️
