Ingredients:
- 1 pound ground pork (or meat chicken)
- 2 tablespoons water
- 2 1/2 tablespoons light soy sauce
- 2 tablespoons cornstarch
- 2 scallions, white parts diced, green parts for garnish
- 1 pound winter melon, peeled, seeded and cut into 1 1/2 inch cubes
- 1 tablespoon oil
- 2 slices ginger
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon sesame oil
- 4 cups chicken stock
Salt and sugar to taste
Green onions and cilantro for garnish
Procedure:
- 1. Combine ground pork, water, soy sauce, cornstarch, and the white parts of the scallions in a bowl. Mix well until the mixture becomes sticky, about 10 minutes.
- 2. Soak glass noodles in cold water for 15 minutes (optional).
- 3. Heat oil in a pot over medium heat. Add ginger slices and saut� until fragrant.
- 4. Add winter melon and stir for 3 minutes.
- 5. Pour in chicken stock and bring to a boil. Reduce heat and simmer for 5-10 minutes, until winter melon is slightly transparent.
- 6. Form 1-teaspoon sized meatballs and gently drop them into the simmering soup.
- 7. Simmer for another 8-10 minutes, until meatballs are cooked through.
- 8. Season with salt, sugar, white pepper, and sesame oil.
Garnish with green scallions and cilantro before serving.
