- 200g flour
- 2 glasses of warm water, crumbled brewer's yeast, mix, let the mixture rest covered with coke cooking cream for 30 minutes!

- 200g cold refrigerator water (4 degrees). Beat the egg, add the flour and water a little at a time to obtain a smooth batter. You can replace the flour with cornstarch and rice flour for a more crumbly result.
For crunchiness, the batter must be as cold as possible, so as to have a large temperature difference between the batter and the oil (which must be at a temperature between 170 and 180 degrees). You can have two bowls, a larger one underneath with ice and the one with the batter in contact with the ice which remains nice and cold.
