This is the recipe for mascarpone cream for Tiramisu as my mother made it:

because even memories fade but recipes fix them over time.

• 500gr mascarpone
• 4 eggs [separate whites and reds]
• 3 &1/2 tablespoons sugar

whip the whites until stiff with a pinch of salt;

mix the sugar with the egg yolks;

incorporate the mascarpone into the reds+sugar;

incorporate the whipped whites.
